L'Ambroisie

Cette adresse discrète, mais néanmoins citée dans les guides (Michelin, Gault et Millau, Lebey, Le Bottin Gourmand, Pudlo), fait partie de la gastronomie de prestige. Son chef, Bernard Pacaud, réalise dans ce restaurant trois fois étoilé de la Place des Vosges, dans le marais, une cuisine à la fois inspirée et rigoureuse qui en fait l’une des meilleures tables de la capitale. On y trouve, également, une vaste carte de bons vins à harmoniser avec des recettes telles que la feuillantine de langoustines aux graines de sésame sauce au curry, le navarin de homard et pommes de terre de Noirmoutier au romarin ou bien au dessert, la dacquoise au praliné et fraises des bois, entre autres dégustations. Le décor italien, orné de fleurs et tapisseries, fait la part belle aux lumières tamisées des bougies dans une atmosphère à la fois romantique et luxueuse. Il entoure une salle où les places sont comptées, ce qui oblige à effectuer une réservation, obligatoire, au minimum un mois à l’avance. Pour un menu à la carte, il faut compter, en 2007, de 190 euros à 300 euros. L’accueil des convives a lieu de 12 heures à 13 heures 30 et de 20 heures jusqu’à 22 heures 15.
